What are the most important things to know about law?
Ignorance is never an excuse for breaking the (criminal) law. Whether you're doing something illegal but don't know it's illegal, or you're unaware of doing something that is illegal, you can still be held responsible. Some common examples: "I didn't know the speed limit was 55" when you were clocked doing 65 will not get you out of a ticket; nor would saying "No, I don't know how fast I was going."
The law is frequently changing. Change can happen in big, readily noticeable ways, like the passage of Obama's Affordable Care Act, but also much more quietly and subtly, as in many judicial opinions.
The law tends to lag behind major social and technological changes. One big example? How tax laws and Internet sales interact. The legislative process tends to be slow, whereas cultural change and technological innovation can be very fast. The law is perpetually playing a game of catch-up.
The right to remain silent. If you're accused of a crime, you don't have to say anything, no matter how hard you're pressed by the authorities. People can forget this basic right and wind up saying incriminating things--even if they're innocent.
The Constitution applies only to "state actors." This means that the Fifth Amendment right to remain silent--as well as the First Amendment right to freedom of speech, and many other rights--are only enforceable against someone acting "under color of law."
The distinction may be most clear in the context of freedom of speech: if you want to pass out political pamphlets on a public sidewalk, your right to do that is heavily protected, but if you want to pass out those pamphlets inside a grocery store, the store management is usually free to require you to leave.
